You will not believe just how easy and delicious this cake is. I knew when I saw this cake full of apples and pecans in my Georgia National Fair Blue Ribbon Cookbook it would be good, but friends it more than exceeded my high expectations.

The first thing that hit me when I saw this cake was the butterscotch chips. Now I’m all about some sweet butterscotch chips, but with apples, Hmmmm. Not a combo I have food porn dreams about.

However, the more I thought of how I enjoy a good apple cinnamon nut cake and how much I love me some butterscotch chips, I thought I’d give it a bake. Who knows, I might be creating some food porn worth dreaming about.

Well y’all, I’m certainly glad I gave it a bake, because this cake was amazing. First of all, it just overflowed with fresh apples (4 cups worth), cinnamon flavor and pecans. Then the butterscotch chips on top combined with the pecans to form a scrumptious, sweet, crunchy topping. Whoever came up with this should win a Nobel Prize for food.

  • Oil – I used vegetable oil. Canola will work just as well. Oil makes the cake moist.

  • Apples – Peeled and sliced. Recipe calls for Granny Smith. I think I used Gala and it was amazing.
  • Butterscotch chips – This makes the cake. Don’t bake it without these. You’ll be missing out.

Ingredients

  • 2 cups granulated sugar

  • Bake at 350° for 1 hour.
  • Cool or eat straight out of the oven. Cut in squares.

    1. Here’s a hard copy recipe book I love. It’s a classic. Southern Living Homemaker’s Cakes Cookbook. It’s from 1971 and sold on Amazon (had trouble linking it here). My mom had it at her house. I’ve confiscated it and love it. BTW, I’m about to start work on my first ecookbook. It will be basic pound cake recipes. Thanks for your comment.
