I thought I was done with my apple bake’n for 2022, but then a co-worker gave me some Granny Smith Apples.  And friends, these were straight from the apple orchard, not the produce section at Kroger.  So, what could one do, but apple bake an apple pound cake.

My first thought when I took my first bite of this easy apple pound cake was, “great flavor”, the second was, “this is so moist” (not overly moist). It reminded me of the apple nut cake, I made a couple of weeks before, amazing flavor and oh so moist.

This simple apple pound cake is full of diced apples that provide such a delicious, sweet, classic apple flavor. The one teaspoon of cinnamon gives just a hint of cinnamon flavor, which is perfect. This allows the apples and their flavor to shine and be the main character in this cake.

  • Fold In Your Apples With A Spatula And Not A Mixer. Using a mixer to incorporate your apples could turn them into applesauce.

Ingredients

Ingredients In Apple Pound Cake

  • 1½ cups butter room temperature
  • 1¼ cups brown sugar
  • 1 cup sugar
  • 5 eggs room temperature
  • 1 tsp ground cinnamon
  • 3 cups all purpose flour
  • 1â…› cups milk room temperature
  • 3 tsp vanilla
  • 3 apples peeled and chopped

  • 2 cups powdered sugar sifted
  • ¼ cup milk room temperature
  • 1 tsp cinnamon

Instructions

Apple Pound Cake Instructions

  • Grease and flour bundt or tube pan
  • Preheat oven to 325°
  • Sift flour
  • Mix flour with 1 tsp cinnamon. Set aside
  • Cream butter and sugar well (5 to 7 minutes).
  • Add eggs one at a time. Beat egg until just incorporated before adding the next.
  • Add flour alternately with milk
  • Add vanilla
  • Fold in apples.
  • Pour batter into greased and floured bundt or tube pan.
  • Bake from 1 hour to 1½ hours.
  • Let cool for 10 to 15 minutes.
  • Glaze cake with cinnamon glaze.

Instructions For Cinnamon Cake Glaze

  • Combine all ingredients in a mixing bowl and beat until smooth.
  • Pour or spoon on cake.

Notes

I used Granny Smith Apples and they were perfect in this cake.  However, other varieties of baking apples will also be delicious.
I let my cake cool fully before I glazed it.

  1. Would i be able to use mini bundt cake pans for this recipe? If so any idea how lomg to bake them for?

    1. Yes, I think these would work in mimi bundts. I would make sure I greased the pans super well though. I don’t know if you’re using 6 cup pans or 12 cup pans. Depending on that, I would bake between 30 and 45 minutes. Please let me know how these come out. Thanks and great to hear from you.
