Yes, I said “one bowl”. It was crazy, I literally dumped all the ingredients in a mixing bowl and whisked them together. I then put the batter in two pie shells, which I’m ashamed to say I bought instead of made (I call this simply deLIZious cheating) and put them in the oven. Can you say quick sweet potato bourbon pie? Easy, Peasy!

How To Prepare Sweet Potatoes For Pie

How you prepare the sweet potatoes doesn’t matter, just as long as they are well mashed or creamed together and there are no strings (strings from the sweet potatoes) attached.

Here are four ways to prepare your sweet potatoes for this simple sweet potato pie (I used 1 large and 1 medium sweet potato):

  • Boil Sweet Potatoes – Boil the sweet potatoes whole for 30 – 45 minutes until they’re tender. Drain the sweet potatoes, run them under cool water and remove the skins.
  • Bake Sweet Potatoes – Heat oven to 400F. Place sweet potatoes on a cookie sheet lined with aluminum foil. Bake 1 hour or until tender. Remove skins or cut sweet potatoes in half and scoop out pulp into a medium bowl.
  • Crockpot Sweet Potatoes – Wrap each potato in aluminum foil. Bake on low for 3 to 4 hours or on high for 2 to 3 hours. Remove skins or cut sweet potatoes in half and scoop out pulp into a medium bowl.
  • Microwave Sweet Potatoes – Set sweet potatoes on a microwave safe plate and poke several times with a fork. Microwave on high 8 to 10 minutes, until they are extremely soft. Cool and remove skins.

This sweet potato bourbon pie and all sweet potato pies freeze very well (I think this pie might even taste a little better after serving some freezer time). The ability to freeze well allows for baking ahead of time and it allows for freezing any leftovers (why throw any calories away when they can just go to your hips next week?).

  • Pie should be thoroughly cooled.
  • Wrap the pie in several layers of plastic wrap.
  • Wrap with a layer of aluminum foil over the plastic wrap for added protection.

Ingredients

  • 1½ cups mashed sweet potatoes I used jus a tad bit more.
  • 2 eggs beaten
  • 1 cup honey
  • 1 tsp salt
  • ½ tsp nutmeg
  • 1 tbsp cinnamon
  • 1 cup milk
  • 2 tbsp butter melted
  • 1½ – 3 tbsp bourbon
  • 2 traditional 9 inch pie shells

Instructions

  • Bake, boil or microwave your sweet potatoes.
  • Mash your potatoes. You can also use a food processor or blender.
  • Put all your ingredients in one bowl and whisk together.
  • Pour batter in two pie shells.
  • Bake at 450° for 10 minutes.
  • Reduce heat to 350° and bake for 30 – 40 minutes.
  • Remove from oven and let cool 40 minutes to 1 hour.

Notes

I used Jim Beam Bourbon Whiskey and it worked wonderfully, but you are not limited to this.  Use what bourbon or alcohol you like.
If you like a strong bourbon flavor use 3 tbsp, for a lighter flavor use less.  I am not a drinker and I used 3 tbsp, the flavor was good, but was a little to much bourbon for me.  I will use 1.5 to 2 tbsp next time.
Use either homemade or store bought pie crusts.  I used store bought and they were just perfect.  No shame.
