BARGAIN SHELF, BROWN SUGAR CINNAMON AND ESPRESSO CHIPS
Let’s start off by saying, espresso chips are not everywhere. However, chocolate chips are and this cake is also amazing with chocolate chips.
Confession here, I am thrifty and love the bargain shelf at Kroger. That bargain shelf in the Vining’s Kroger in Atlanta, GA is responsible for this brown sugar cinnamon cake.
My thrifty self and I were in the Vining’s Kroger last Sunday perusing the bargain shelf and I saw Toll House Espresso Chips for $1. Something I wouldn’t buy for regular price, but this was a big steal.
These chips sounded fallish to me and it’s time we food bloggers start putting out our fall recipes.
So, what about that Southern Living Brown Sugar Pound Cake I’ve been dying to make dressed up with some cinnamon and espresso chips?
Friends, I spent the rest of Sunday baking this cake, tasting a couple of pieces (yes, more than one) of it, taking pictures of it and handing it out to neighbors (it received rave reviews from them).
This $1 purchase turned into quite a delicious and valuable investment. The brown sugar and cinnamon blend gave this a scrumptious coffee cake flavor. That was then topped off with the coffee flavor of the espresso chips.

This brown sugar cinnamon cake is a heavenly melody of FALLbulous flavors. It made me yearn for a slight chill in the air (not gonna happen in late July in Atlanta, but a girl can dream) and to look out and see falling leaves.
This simple cake is a must for my fall recipe line up. I can’t wait to serve this to the girls at an autumn brunch.
OLD FASHIONED BROWN SUGAR CINNAMON CAKE INGREDIENTS
- butter
- shortening
- brown sugar
- eggs
- all purpose flour
- salt
- baking powder
- cinnamon
- evaporated milk
- espresso chips you can use chocolate chips or butterscotch chips.
BROWN SUGAR POUND CAKE RECIPE
- Cream shortening and butter
- Add brown sugar
- Add eggs one at a time
- Sift dry ingredients (including cinnamon).
- Add dry ingredients to cream mixture alternately with evaporated milk.
- Fold in chips
- Pour batter in well greased and floured tube or bundt pan.
- Bake at 300° for 1 hour and 15 minutes to 1 hour and 30 minutes.
- Remove from oven and cool for 10 minutes.
CAN I USE BROWN SUGAR FOR CAKE?
I love, love, love brown sugar and have gotten where I substitute it for white sugar in some recipes. Until recently I never would have done this, but it’s worked out for me every time.
According to this post in Escali, in most recipes, you can interchangeably use brown sugar and white sugar. However, there might be a difference in the texture of your baked goods. Brown sugar is moister than white sugar, so this will cause your baked goods to be softer and moister. Also, using brown sugar can result in your baked goods coming out darker than with white sugar.
