This Chocolate Peppermint Cake is one I had seen in my home churches Finest Recipes  Cookbook (First Baptist Church Huntsville, AL 1995) for years and never gave it a second glance. That changed several years ago when I needed a cake for Christmas, divinely found this chocolate mint cake recipe and made it.

It was an instant family favorite.  Loved by both the kids and adults alike. It is now known simply as “The Cake” and is made at least once each Christmas season (Don’t tell, but we make it all year round).

Rich and luscious, this easy chocolate peppermint cake has a layer of melted York Peppermint Patties between the simple homemade chocolate cake and the amazing chocolate frosting.  There’s even a hint of cinnamon in the cake that blends in deliciously.

This is literally a York Peppermint Cake or York Peppermint Sandwich Cake.

It’s so easy to make with simple from scratch ingredients.   Plus, it is a great Holiday dessert for a crowd. This makes it perfect to serve at Christmas dinner or Thanksgiving.

Bake in it just like you would a 13×9 metal pan.  Your cake may just brown faster than in a shiny metal pan.

This cake is easy to freeze and freezes well.  You can freeze it in slices or in the pan.

  • Tightly wrap each slice in plastic wrap.
  • Place in Ziploc freezer bag or wrap in aluminum foil.
  • Pull out of the freezer and thaw when you’re ready for a slice.

It’s best to wrap the entire pan in plastic wrap and then aluminum foil. However, if you’re like me and this is a bit much, you can cover the top in aluminum foil and place it in the freezer.  I freeze a portion or all of this cake anywhere between a couple of days and a month like this and have always had success.

Ingredients

Chocolate Peppermint Cake

  • 2 cups All-purpose flour sifted
  • 2 cups Sugar
  • ¼ cup Cocoa
  • 1 tsp Cinnamon
  • 1 cup Butter
  • 1 cup Water
  • 1 tsp Baking soda
  • 2 Eggs
  • ½ cup Buttermilk
  • 1 tsp Vanilla
  • 11 – 14 oz York Peppermint Patties

Chocolate Frosting

  • ½ cup Butter
  • cup Milk
  • 16 oz Powdered sugar
  • ¼ cup Cocoa
  • 1 tsp Vanilla extract

Instructions

Instructions for Chocolate Peppermint Cake

  • Combine flour, sugar, cocoa and cinnamon and set aside
  • Combine butter and water in medium to large saucepan and bring to a boil
  • Remove from heat and stir in baking soda
  • Add flour mixture, stirring well
  • Stir in eggs, buttermilk and vanilla extract
  • Pour mixture into a greased and floured 13×9 pan
  • Bake at 350° for 30 minutes
  • Remove from oven and top with peppermint patties
  • Bake an additional 2 minutes
  • Remove from oven and spread melted candy over cake
  • Spread chocolate frosting over top of cake

Instructions for Chocolate Frosing

  • Combine butter and milk in saucepan and bring to a boil
  • Remove from heat
  • Combine sifted powdered sugar and cocoa and add to butter mixture
  • Add vanilla extract and stir until smooth

Notes

This cake freezes really nicely.  Cover pan well with aluminum foil.
