Let me start off by saying this is a luscious, delicious and super easy to make caramel pie. However, if you are looking for a beautiful, Pinterest perfect looking, low calorie pie, this is not for you.

This caramel pie, using condensed milk, is loaded with intoxicating calories and is a little on the messy side (though it has firmness to it and is not too messy).

This is one of those don’t judge a book by its cover pies. Or, one of those not so hot girls you overlooked in high school who is now smok’n hot both inside and out pies.

Yes, when it comes to flavor this pie is extremely smok’n hot.

Caramel Made With Condensed Milk

The caramel in this caramel pie recipe from scratch is made with one ingredient, condensed milk. Yes, and it’s just as delicious as the old school caramel, where you caramelize the sugar and butter. I’m getting tired just thinking about that process.

How To Make One Ingredient Caramel

You can make one ingredient caramel on the stove top or the crock pot.

Stove Top Condensed Milk Caramel

  • in a large pot submerge all cans of condensed milk in water.
  • bring water to a boil, cover and let simmer for 3 hours.
  • add water to keep cans totally submerged.
  • cans are very hot. let them cool at least 30 minutes before opening.
  • open a can and you’ll have a can of yummy caramel.

Crock Pot Caramel With Condensed Milk

  • submerge all cans of condensed milk in water in a crock pot.
  • cook on low heat for 8 to 10 hours (10 hours for dark caramel).
  • cans are very hot let them cool at least 30 minutes before opening.
  • open a can and you’ll have a can of yummy caramel.

How To Store This Homemade Caramel Pie

Since both the caramel and meringue need to be refrigerated this pie needs to be kept in the refrigerator. It can be stored in the refrigerator for up to a week.

It also freezes well. I have had some of my condensed milk caramel pie in the freezer for 4 or 5 days and it is just as delish as day one. You can freeze this simple caramel pie up to a month.

  • 3 14 oz. cans sweetened condensed milk

Ingredients in Creamy Meringue Topping

  • 2 graham cracker or oreo crusts
  • 8 oz cream cheese softened
  • 1½ cups powdered sugar sifted is best
  • 8 oz whipped topping

Instructions For Easy Homemade Caramel

  • Submerge all 3 cans of condensed milk in water in a large pot on the stove or in a Crock Pot.
  • For the stove, bring water to a boil, cover and let simmer for 3 hours. Add water to keep cans totally submerged.
  • For Crock Pot, cook on low heat for 8 to 10 hours (10 hours for dark colored caramel).
  • When removing from water, for both the stove and Crock Pot, the cans will be hot. Remove carefully and let stand, without opening, for 30 minutes or longer.
  • After cooling for at least 30 minutes, open the cans of caramel and divide equally into pie crusts. Spread the caramel over the bottoms of the pie crusts.
  • You can put these in the freezer if the caramel is still warm and needs to cool more.

Instructions For Creamy Meringue

  • You can do this while the caramel is cooling.
  • Beat cream cheese and powdered sugar until smooth.
  • Add whipped topping and beat well until mixture in light and fluffy.
  • Spread this creamy meringue mixture evenly over each pie. The caramel needs to be room temperature or cooler before spreading the meringue on top.

Notes

IT IS IMPORTANT YOU KEEP THESE PIES REFRIGERATED.  
I also kept mine in the freezer and they were great.
I ran errands while my caramel cooled.  It cooled for about 6 hours.
Make sure your caramel in the pie crust is room temp or cooler before putting the meringue on top.  You can put your pie crust filled with caramel in the freezer before putting the meringue on top.
