Since both the caramel and meringue need to be refrigerated this pie needs to be kept in the refrigerator. It can be stored in the refrigerator for up to a week.
It also freezes well. I have had some of my condensed milk caramel pie in the freezer for 4 or 5 days and it is just as delish as day one. You can freeze this simple caramel pie up to a month.

- For the stove, bring water to a boil, cover and let simmer for 3 hours. Add water to keep cans totally submerged.
- For Crock Pot, cook on low heat for 8 to 10 hours (10 hours for dark colored caramel).
- When removing from water, for both the stove and Crock Pot, the cans will be hot. Remove carefully and let stand, without opening, for 30 minutes or longer.
- After cooling for at least 30 minutes, open the cans of caramel and divide equally into pie crusts. Spread the caramel over the bottoms of the pie crusts.
- You can put these in the freezer if the caramel is still warm and needs to cool more.

- Beat cream cheese and powdered sugar until smooth.
- Add whipped topping and beat well until mixture in light and fluffy.
