I found this recipe is one of my church cookbooks and it immediately reminded my of my crustless peach pie recipe.  It is peach pie without crust and this is apple pie without crust and both these crustless pies are flavor bombs for your taste buds.

So, if this apple pie without pastry crust is a no pastry pie, is it just baked apples in a pie dish.  Oh no, I wouldn’t tease and excite you with the yumminess of apple pie and then let you down with just baked apples in a pie dish.  

This no pastry apple pie uses a buttery, sweet crumble on top to replace the tradtional apple pie pie crust.  And folks, this crumble and the juicy apples create such a luscious, delicious sweet symphony of flavors that your taste buds will forget the existence of pastry pie crust..

I always think of apple pie as a cinnamony, warm, fall apple dessert.  Well, this apple pie is not only missing the crust, it’s missing the cinnamon.  BUT STOP!  Don’t Google away, because this cinnamonless apple pie or apple pie without cinnamon is mouthwateringly delicious. 

I know, it’s hard to grasp, but the lack of cinnamon in this crustless apple pie allows the sweet and tart flavors of the apples to explode.  This apple-icious explosion combined with the buttery, sweetness of the crumble topping will win over even the most diehard cinnamon lover.

Swedish Apple Pie Recipe? Well Kinda

After Googling “Crustless Apple Pie”, another no crust apple dessert began to appear in my search results and that was Swedish Apple Pie.  Swedish apple pie, oh my, what is Swedish apple pie?

Turns out Swedish apple pie is also an apple pie with no crust and similar to this crustless apple pie recipe. Both Swedish  apple pie and this crustless apple pie are apple pies without pastry crust, both have a topping and both are baked in pie dishes.

These crustless pies are different in that the recipe for Swedish apple pie includes cinnamon.  It is also topped with a crispy, sugar cookie like topping, as opposed to the crumble topping on this crustless apple pie.

Tools Used In Crustless Apple Pie Crumble 

Ingredients In Crustless Apple Pie Recipe

  • 2 – 3 apples – 2 large apples and 1 medium baking apple or 2 large baking apples. Apples need to be peeled, cored and sliced.
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 2 tbsp brown sugar (equals 1/8 cup brown sugar)
  • 4 tbsp butter – room temperature

How To Make Crustless Apple Pie

  • Preheat oven to 375F
  • Toss the apple slices with lemon juice in a mixing bowl.
  • Fill a buttered 9 inch pie pan with the apple slices.
  • Drizzle maple syrup over apples.
  • In a mixing bowl combine flour, salt and brown sugar.
  • Put in room temperture butter, but do not over mix (texture should be a crumble).
  • Scatter mixture over apples.
  • Bake for 30 to 45 minutes.  Until top is a crispy golden brown.
  • Cool for 20 minutes or just dig in while it’s hot.

Tips For The Best, Easy No Crust Apple Pie

  • If you are a die hard apple lover you will probably want to use 3 apples. I am a die hard crumble lover and I thought this crustless pie was amazing with 2 large apples. 2 large apples barely covers the pie plate, which is fine by me, but probably not someone who is all about the apples.
  • If possible choose fresh apples that are in season for this crustless apple pie.  Fresh, ripe apples will have a strong apple aroma. Unripe apples will be overly hard and to green or yellow.  (See below for the best apples to use for this crustless pie)
  • Look for firm apples with no bruises or bug holes.
  • Cut all your apples into similar sized slices.  Nobody wants to bite into a big piece of apple that didn’t get cooked all the way.
  • Recipe prep time is 10 to 15 minutes depending on how fast you can peel and slice your apples.
  • You can substitute 2 tablespoons of brown sugar for the 2 tablespoons of maple syrup in the apple mixture.

Toppings For Crustless Apple Pie

This crustless apple crumble pie is mouthwaterly delicious and absolutely amazing by itself with no toppings.  However, if you’d like to elevate this simple apple pie without crust to an even higher level try topping it with one of, or a combo of, these:

  • A scoop of vanilla ice cream
  • Whipped cream
  • A caramel drizzle 

Best Apples For Baking Crustless Apple Pie

There are apples galore at the grocery store.  Just orchards of apple diversity, but which ones are the best for apple baking, especially for baking this easy crustless apple pie recipe?  Which apple or apples will make your taste buds tingle and have them doing the happy dance?

This article from Betty Crocker says, “Baking Apples” rain supreme for baking pies and crisps.  A baking apple is one that is firm and holds its structure during baking.  In other words, it doesn’t get all mushy while baking.

These baking apples include:

  • Braeburn Apples – Strong apple flavor
  • Cortland Apples – Sweet and tart
  • Honey Gold Apples – Sweet and crisp
  • Jonathan Apples – Mildly sweet with a tart tang
  • Fuji Apples – Sugary-sweet flavor
  • Gala Apples – Sweet and smooth
  • Granny Smith Apples – Nice, lovely tartness
  • Haralson Apples – Tart flavor

I used Granny Smith Apples and Gala Apples in my crustless apple pie recipe and this was a delicious and tantalizing melody of sweet and tart apple flavors that was just perfect for this no crust apple dessert.

Should I Peel Apples For This No Crust Pie

To peel or not to peel that is the question.  I nearly always peel my apples when I apple bake.  The skin doesn’t break down enough during baking (not like good ole peach skin) and this can make for a tougher texture.  However, feel free to leave the skin on if you like.

How To Store No Crust Apple Pie

This crustless apple pie is just so darn, slap yo mama delicious, and it’s not a large recipe, so there will probably be no leftovers.  However, in case there is, you can store them as follows:

  • Cover the remainder well and store at room temperature for 2 to 3 days.
  • Cover the remainder well and store in the refrigerator for 3 to 4 days.
  • Place the leftovers in a freezer safe container and freeze up to 3 months.  The crustless pie might not come out of the freezer quite as perfect as when it went in.  You might find the crumble on top a little softer.  However, it’s still a very enjoyable treat.

This post from Freeze It says, to defrost the frozen apple pie with no crust, just pop it in the fridge overnight or you can heat it up in the oven from its frozen state.

  2. I love this. I used unpeeled Cortlands. I wanted a recipe that uses maple syrup. Even after 40 minutes, topping was nicely soft. My new favorite apple recipe.
