I received a Wilton Mini Loaf Pan for Christmas and have been dying to bake my favorite cream cheese pound cake recipe in this mini loaf cake pan. When I finally got around to baking this cream cheese pound cake recipe from scratch in my mini loaf cake pan, it did not disappoint.

Ingredients In Mini Loaf Cake Recipe
I have included the ingredients for the cream cheese glaze, but the glaze is optional. These small pound cake loaves, are amazing with or without the glaze.
- cream cheese
- butter
- sugar
- eggs
- all purpose flour – sifted
- vanilla or almond extract
- cream cheese
- butter
- powdered sugar
- vanilla extract
- milk
For your cream cheese, butter, eggs and milk, please use room temperature ingredients. Room temperature ingredients incorporate so much easier and can effect the outcome of your cakes.
Mini Loaf Cakes, Perfect For Gifting
Seriously, these easy mini pound cake loaves are both cute and delicious, which makes them the perfect gift. Who doesn’t want to receive cute and delicious?
Put each loaf (use plain and not glazed loaf) in a treat bag (needs to be 6×4 or larger) and tie with a colorful ribbon or a gift bag tie. It’s just that simple.
You can also gift these glazed mini pound cakes in small cake boxes. Who wouldn’t love to receive a box with a bow and an adorable cake inside? For me, this would lead to tears of joy.
By the way, there’s no shame in gifting one to yourself.

Baking Cakes In Mini Loaf Pans
There’s much more to baking mini loaf cakes in the oven than just reducing the time they bake. That’s what I learned after baking these mini pound cake loaves and researching this post.
The baking time cake when I do a full pound cake recipe in a tube or bundt pan is 1.25 to 1.50 hours. So, I set my timer for 30 minutes, since these were mini. However, my mini cake loaves ended up taking almost an hour to bake. Whaaaatttttt??????
After researching why it took so much longer to bake, there are several important lessons I learned (mainly from this post by The Prepared Pantry) and I’d like to share them here.
- A true mini loaf cavity is 5.75 inches wide and 3.25 inches in diameter.
- You should fill each cavity 2/3’s full.
- Dark colored pans bake much faster than light colored pans. This can reduce your cooking time up to 20%.
- The depth of the batter is very important. Batter that’s 1.5 inches deep will bake almost as quickly as a 13×9 pan. Cavities that are filled with 2 inches or more of batter will take considerably longer to bake.
- Start checking the mini loaves in the oven early, just to be safe, and monitor.
Can You Freeze Mini Pound Cake Loaves
Pound cakes freeze super well and so do mini pound cakes. You freeze these mini pound cake loaves just like you would a full size pound cake. To freeze:
- Wrap each individual mini loaf fully in plastic wrap.
- Then wrap each loaf fullt in aluminum foil.
- Then place one or more in a freezer bag or freezer storage container.
- Place in freezer
- Thaw your cakes while they’re still wrapped (take them out of the freezer bag or container). This way condensation will not form on the cake, but the wrapping.
- These will freeze up to 3 months.

- 4 ounces cream cheese room temperature
- ¾ cup butter room temperature
- 1½ cups sugar
- 3 eggs room temperature
- 1½ cups all purpose flour sifted
- ¾ tsp vanilla or almond extract

- 4 ounces cream cheese room temperature
- 4 ounces butter room temperature
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 to 3 tablespoons milk room temperature – the amount you use depends on how thick you want your glaze.
Instructions
Instructions For Mini Pound Cake Loaves
- Combine butter and cream cheese well.4 ounces cream cheese, ¾ cup butter
- Add sugar and mix well.1½ cups sugar
- Add eggs alternately with flour3 eggs, 1½ cups all purpose flour
- Add vanilla or almond extract¾ tsp vanilla or almond extract
- Spray mini loaf pan with Baker's Joy or grease and flour each cavity well.
- Pour batter in mini loaf pan
- Bake from 45 minutes to 1 hour at 325°
- Remove from oven and let cool in pan 5 to 10 minutes.
- Invert pan and mini loaves should fall out.
Instructions For Cream Cheese Glaze For Pound Cake
- Combine butter and cream cheese well, until all lumps disappear.4 ounces cream cheese, 4 ounces butter
- Gradually add powdered sugar. Mix well until all lumps are gone and mixture is smooth.1 cup powdered sugar
- Add vanilla extract1 teaspoon vanilla extract
- Add milk until it is as thick or thin as you like it. You can also thin it out by heating the glaze in the microwave.1 to 3 tablespoons milk
- Spoon or drizzle over mini loaves
