I pulled this out of my Southern Living Homemaker’s Cookbook Cakes. This recipe is supposed to be done in two 8 inch pans, but I baked it in a bundt pan and it came out stunningly beautiful and oh so tasty.

This is a simple and super moist bundt cake from scratch. It’s got a rich, but not overly rich chocolate flavor. The cake is then perfected, as it’s topped with this easy 2 ingredient chocolate ganache.

It’s an old fashioned classic that’s a crowd pleaser. Perfect for serving as dessert after Sunday lunch with a hot cup of coffee. It’s also great to eat when you’re feeling down and blue, because chocolate understands.

Bundts Are Easy And Simple Cakes

I do love eating a good frosted layer cake (my favorite are the birthday cakes from Publix with the butter cream frosting, but I digress). However, I’m not a fan of frosting a layer cake.

Frosting requires to much time, getting the layers cut down correctly and making sure all is even and correct. For me, it’s just to much effort when you can just make a bundt.

You don’t have to frost a bundt and if you do it takes a fraction of the time. Bundts can be easier to store, because most bundts aren’t as tall as layer cakes. Plus, they’re easier to move and transport, because there are no layers to shift or fall off the cake.

I know not all will agree, but to me bundts are usually a more elegant looking cake than a layer cake. If you put a lovely glaze on a bundt with just the right decorations, it’s fit for a royal ball on Downton Abby.

I have discovered many layer recipes bake up just as delicious in a bundt. Therefore, if a layer cake recipe catches my eye, I’ll look further and see if it can be bundted.

The guidelines I follow are:

1. Use Thick Cake Batter

To me, thick cake batter produces a cake that less likely to stick to the bundt pan. From my years of experience with bundt cakes, I believe runny cake batter sticks in the bundt pan’s crevices more easily than thick batter. This then causes the cake to stick to the pan. Again, this is a me thing. I searched for articles to back this up, and found one or two, but nothing more.

2. Use The Right Size Bundt Pan

You do not want to little or to much batter in your bundt pan. From my experience and research I find that two 8 inch or 9 inch cake layers convert well to the 10 to 15 cup capacity bundt pan. I converted two 8 inch layers to my 10-15 cup Nordic Anniversary Bundt and it made an outstanding cake.

Chocolate Bundt Cake Ingredients

  • ½ cup shortening
  • 1¼ cups sugar
  • 2 eggs room temperature
  • 2 ounces melted unsweetened baking chocolate 2 ounces is half a bar.
  • 1¾ cup cake flour sifted
  • ½ tsp salt
  • 1½ tsp baking soda
  • 1 cup buttermilk room temperature
  • 1 tsp vanilla extract

Chocolate Ganache Ingredients

  • 1 cup semi sweet chocolate chips
  • ½ cup heavy cream or whipping cream

Instructions

How To Make Easy Chocolate Bundt Cake

  • Grease and flour bundt pan well.
  • Preheat oven to 350°
  • Thoroughly blend shortening and sugar.
  • Add eggs and melted chocolate and beat until smooth.
  • Sift together flour, salt and soda.
  • Add flour mixture to creamed mixture alternately with buttermilk. Do not overmix.
  • Add vanilla.
  • Pour batter in well greased and floured bundt pan.
  • Bake at 350° from 30 to 45 minutes.
  • Remove from oven.
  • Let cool 10 to 12 minutes and release.
  • Glaze with ganache

How To Make Easy Chocolate Ganache

  • Add chocolate chips and cream in a microwave safe bowl.
  • Heat in 20 second increments and mix after each increment.
  • Repeat until ganache is smooth.

Notes

I doubled this recipe and made 1 bundt cake and 2 small mini loafs.  Everything turned out spectatular.
