I must start off with a baking blogger’s confession, I was not excited about baking any recipe with cranberries.
Cranberries are not a sexy fruit. They’re that thing and sauce that everyone feels obligated to serve over Thanksgiving and Christmas.
But, I needed 3 easy Holiday bread recipes for my site and Pinterest told me I must do one with cranberries. As I looked through church cookbooks for an easy cranberry bread recipe, I didn’t think sounded terrible, I ran across this recipe and it turned out surprisingly yummy.
The blend of the apples, cinnamon and craberries in this cranberry apple walnut loaf creates amazing flavor. The sweetness of the apples and cinnamon go hand and hand with the tartness of the cranberries. Then add the crunch and flavor of the walnuts and this is quite a sweet treat.
In addition to this cranberry apple walnut bread’s great taste, it’s very easy to prepare. Even with pealing and chopping 2 apples this is a quick recipe, that requires very simple ingredients.

Easy Cranberry Apple Nut Bread
Equipment
- 8½x4½ inch Loaf Pan
Ingredients
- 1½ cups All purpose flour
- 1½ tsp Baking powder
- ½ tsp Baking soda
- 1 tsp Cinnamon
- 2 cups Golden Delicious apples peeled and chopped
- ¾ cup Sugar
- 2 Tbsp Vegetable oil
- 1 egg
- 1 cup Fresh Cranberries I chopped up cranberries instead of using whole cranberries.
- ½ cup Walnuts chopped
Instructions
- Mix flour, baking powder, baking soda, and cinnamon and set aside
- Mix apples, sugar and oil in medium bowl
- Add egg to apple mixture
- Add flour mixture just until moistened. Batter will be thick
- Stir in cranberries and walnuts
- Spread batter into a greased 8½x4½ loaf pan
- Bake at 350° for 1 hour or until toothpick inserted in center comes out clean.
- Cool in pan 10 to 15 minutes and release
