Over the summer I ran across this recipe in one of my mom’s Baptist cookbooks. I’ve had these bars at get togethers over the years and they’re always so scrumptious, so I new they were a must bake this fall.

Despite this being a super easy recipe, with all my fall baking, I never got around to these. But, finally as fall was winding down and after making my pumpkin pecan pie and pumpkin pie, I knew it was time to bake these classic, easy dessert bars.

“Dearly beloved we are gathered here today to join this pecan pie and these chocolate chips in heavenly, delicious culinary matrimony.” Really, I can’t think of a better match. I mean, chocolate chips and pecan pie becoming one as chocolate chip pecan pie. Truly, a divine union.

So, how could this perfectly. luscious culinary union get any better? Well, try making it in bar form and putting it on a shortbread crust. It might not be any better, but it is sure a magnificently, tasty twist on chocolate chip pecan pie.

Delicious And Easy Dessert Bars

These chocolate chip pecan pie bars are indulgent, chocolate chip and pecan, sin in a 9×13 pan and cut into bars. However, they are more than that, they are also so simple and easy to make.

It’s corn syrup, sugar, eggs and melted butter whisked together with chocolate chips and pecans. This is simply poured on an easy 9×13, three ingredient shortbread crust and baked for 30 minutes. Baking can’t get any easier than that unless it’s bought.

You can also cut them in as many squares as you like or need and serve them anywhere. They’re easy to tote to a dinner or dessert party and effortless to serve without making a mess. Pecan pie bars with chocolate chips also freeze well, so you can bake ahead or freeze any leftovers.

Though I think of these as kind of a fall bake, they’re delicious and can be baked all year long. These are a must, for not only your fall baking, but your whole year baking lineup.

Light Or Dark Corn Syrup For Pecan Pie Bars

Any pecan pie recipe I’ve seen has called for light corn syrup, but do you have to use light corn syrup? According to this FAQ post from Karo Food Services, light and dark corn syrup can be usually be used interchangeably.

Which corn syrup to use is really a matter of what you prefer. Light corn syrup has a delicately sweet flavor. It is used in fruit sauces and jams. Dark corn syrup has a more robust flavor and is used in baked goods.

Pecan Pie Bars (With Chocolate Chips)

Ingredients

  • 1½ cups all purpose flour
  • ½ cup butter softened
  • ¼ cup brown sugar
  • 3 eggs
  • ¾ cup light corn syrup
  • ¾ cup sugar
  • 2 Tbsp butter melted
  • 1 tsp vanilla extract
  • 1¾ cups chocolate chips
  • 1½ cups pecans chopped

Instructions

  • Preheat oven to 350° F.
  • Grease or spray a 9×13 pan
  • With a food processer, mixer or by hand, combine flour, butter and brown sugar until a dough is crumbly and starts to stick together.
  • Press into the bottom of a 9×13 pan.
  • Bake for 12-15 minutes or until very lightly browned.
  • Combine eggs, corn syrup sugar and vanilla in a medium mixing bowl.
  • Add melted butter.
  • Stir in pecans and chocolate chips until well combined.
  • Pour mixture onto crust.
  • Bake for 25-30 minutes. Until bars are browned and set.
  • Cool completely before cutting the bars.

Notes

If storing these bars overnight, store in the fridge.  This is due to the eggs used in the filling.  You can store in the fridge up to 4 days.  
These bars freeze very well.  To freeze them wrap them tightly in plastic wrap and aluminum foil and freeze for up to 3 months.  Thaw the bars overnight in the fridge before serving.
