FALL PUMPKIN COOKIES
Fall is here and I’ve been doing a ton of fall baking, especially with pumpkin. I call this my pumpkin bak’n. I’ve made several pumpkin cakes and pumpkin bread, but no pumpkin cookies. While I was making this scrumptious chocolate chip pumpkin bread last week, I decided it was time to change that.
After finishing my chocolate chip pumpkin bread, I found this soft pumpkin spice cookie recipe in my Georgia National Fair Blue Ribbon Cookbook and new it was my next bake and blog post.
EASY PUMPKIN SPICE-TACULAR COOKIES
Pumpkin spice, spice baby so good, so good. Yes, these pumpkin spice cookies are so very good. The cinnamon, nutmeg combo in this pumpkin spice cookie recipe is so perfect. It is then enhanced even further by the addition of warm melty chocolate chips.
I was so proud of these pumpkin spice cookies with chocolate chips that I took them to several neighbors and the cookies all got 5 (out of 5) star reviews from my neighbors in the hood.
One more thing you’ll love about these pumpkin spice cookies is just how easy these are to whip up. I made them with just one bowl in 8 to 10 minutes. Within 30 minutes of starting my cookie baking, I was getting cookies out of the oven and sampling (well, maybe more like devouring).
Friends these autumn pumpkin spice chocolate chip cookies are just a win, win. They’re easy to make and bake and the taste is just spectacular. I’m so glad I made these and will make them a part of my fall baking rotation.
EASY CHOCOLATE CHIP PUMPKIN COOKIE INGREDIENTS
Wet Ingredients
- pumpkin
- egg
- milk
- oil
- vanilla
- sugar
Dry Ingredients
- flour
- soda
- baking powder
- salt
- cinnamon
- nutmeg optional
- chocolate chips
HOW TO MAKE PUMPKIN SPICE COOKIES WITH CHOCOLATE CHIPS
- Preheat oven to 375°
- Combine dry ingredients together in a bowl.
- Mix wet ingredients together in a bowl.
- Add dry ingredients to wet ingredients and mix well.
- Mix in chocolate chips.
- Spoon onto a cookie sheet.
- Bake 9 minutes or until done.
