A quick and easy strawberry fruit crisp with few ingredients.  It’s loaded with juicy strawberries and topped with a sweet and buttery brown sugar crumble.

I got the idea for this simple and easy crisp recipe as I was researching my apple crisp recipe.  This strawberry crisp has a cinnamony crumb topping. that makes scrumptious harmony with the luscious strawberries. What a delicious treat for summer or anytime of year.

Simple Fruit Crisp Recipe

As I have gotten older I have come to so appreciate simple, from scratch dessert recipes and this old fashioned strawberry fruit crisp is one of them.  The most time consuming part of this recipe is cutting up your strawberries.  After that it takes just a few minutes to put together.

This quick strawberry crisp is simply cut up strawberries and sugar, which make a yummy strawberry filling.  The strawberry filling is then topped with a brown sugar cinnamon crumble topping that is golden brown when you pull it out of the oven.

Friends, you can’t get anymore simple than that without cheating.

Most of the strawberry crisp recipes I researched were strawberry crisp with oats.  This recipe however, has an oatless topping.  As I say in my apple crisp post, I am so in love with the combination of flour, brown sugar and butter (I call that nectar of the gods), why would I want to add oats to perfection.  

Seriously, the topping on this crisp is amazing.  There’s a 1/2 teaspoon of cinnamon added to the flour, brown sugar and butter topping that makes it even better, if that’s possible.  This cinnamon topping makes a delicious melody with the sweet strawberry filling.

Easy Strawberry Crisp Recipe Ingredients

  • Strawberries – Cut in small pieces
  • Brown sugar
  • Cornstarch
  • Granulated Sugar
  • Brown Sugar
  • All Purpose Flour
  • Cinnamon – This adds an added flavor to the topping and blends so will with the strawberries.
  • Butter – It is best to use chilled butter.  Do not use melted butter. 

How To Make Strawberry Crisp

  • Cut strawberries in small pieces
  • To strawberries add brown sugar and cornstarch and mix.
  • Combine both granulated sugar, brown sugar, flour, cinnamon and butter using a food processor, pastry cutter or by hand to make the topping.
  • Transfer the strawberry filling to a prepared 9×13 baking dish. Spread as evenly as possible over the bottom.
  • Spoon or sprinkle the topping over the strawberry filling.
  • Bake at 350℉ for 40 to 45 minutes.
  • Remove from oven and let cool for 15 minutes.

Tips To Make This Recipe For Strawberry Crisp

  • You can use fresh or frozen strawberries.
  • If you are using frozen strawberries, you may need to use 3.5 to 4 tablespoons of cornstarch.  This will help absorb the excess water that comes from the frozen strawberries.
  • If you like a strawberry crisp that’s overflowing with strawberries, use 7 or more cups of strawberries.
  • You can use 1 cup of granulated sugar or 1 cup of brown sugar instead of 1/2 cup of each.
  • Your butter for the topping should be chilled.  I actually set mine out for a bit before baking, so it was not super cold. 
  • Do not use soft butter or melted butter.
  • I combined my topping ingredients in a food processor. You can also use a pastry cutter or your hands.  The mixture will be crumbly and sandy.
  • My strawberry crisp baked for 43 minutes and it was perfect.  Make sure you start checking your crisp at 40 minutes.
  • You do not have to let the crisp cool to eat.  It can be eaten fresh out of the oven.  Letting it cool will allow the juices to thicken a bit first.

Can You Use Frozen Strawberries In Crisp

Yes, frozen strawberries are just fine for this strawberry crisp.  Fresh strawberries are preferred, but using frozen strawberries will still produce a strawberry masterpiece. 

When using frozen strawberries you will want to add a little extra cornstarch. You can use 1/2 tablespoon to 1 tablespoon to the already 3 tablespoons the recipes calls for.  This will help absorb the excess water that comes from the frozen strawberries.

How To Serve Strawberry Crisp

This strawberry crisp makes a delicious hot strawberry dessert, especially with a scoop of vanilla ice cream or whipped cream or both.  You can also get a little edgy and try it with some blueberries, blackberries or chocolate chips.

Also, please note, this crisp is also very scrumptious served cold. So if it starts calling your name from the fridge in the middle of the night with that seductive Barry White voice, give in, run to the fridge and indulge

How To Store Strawberry Crisp

Strawberry crisp will keep in the refrigerator for 3 to 5 days. Let the crisp cool to room temperature.  Cover with plastic wrap and aluminum foil or transfer to an airtight container

Can You Freeze Strawberry Crisp

You can freeze strawberry crisp, but once thawed it might be more like strawberry limp.  It’s still really good; however, some of the crispiness is gone.  If you freeze it, warm it in the oven first.  That will help get some of the firmness back.  If you can’t wait for it to heat up in the oven, then heat it in the microwave and enjoy some strawberry limp (no shame).

This recipe is both simple and delicious.  It can be whipped up in no time and contains ingredients you probably already have on hand.  It is perfect for summer cookouts and gatherings, but don’t box it in for summer only.  It is wonderful and will be devoured all year long.

Ingredients

For Strawberry Filling

  • 6 – 8 cups strawberries cut in small pieces
  • 2 – 4 tbsp brown sugar
  • 3 tbsp cornstarch

For Strawberry Crisp Topping

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1½ cups all purpose flour
  • ½ tsp cinnamon
  • ½ cup butter butter should be chilled.

Instructions

  • Preheat oven to 350℉
  • Grease 9×13 baking pan or spray with baking spray.

To Make Strawberry Filling

  • Cut strawberries in small pieces.
    6 – 8 cups strawberries
  • To strawberries add brown sugar and cornstarch and mix
    3 tbsp cornstarch, 2 – 4 tbsp brown sugar
  • Set strawberry filling aside.

To Make Strawberry Crisp Topping

  • Combine granulated sugar, brown sugar, flour, cinnamon and butter using a food processor, pastry cutter or by hand.
    ½ cup granulated sugar, ½ cup brown sugar, 1½ cups all purpose flour, ½ tsp cinnamon, ½ cup butter

Assemble The Strawberry Crisp

  • Transfer the strawberry filling to a prepared 9×13 baking pan. Spread as evenly as possible over the bottom.
