Can you say indulgent?  This is a nutty, thick, classic chewy brownie that’s topped with a layer of gooey marshmallows and chocolate brownie frosting. 

This is such a fun and easy recipe that I found in my Amish cookbook.  Who doesn’t like layers of brownie, marshmallows and chocolate brownie frosting?  I hope you enjoy the indulgence as much as I did.

These are chewy chocolate brownies with nuts, marshmallows and chocolate brownie icing, but the marshmallows are definitely the star of these marshmallow brownies.

With 2 tablespoons of cocoa in the brownie itself the brownie is chocolaty, but not an intense chocolate.  It plays much more of a supporting role in this yummy brownie production.

There are also nuts and the decadent chocolate frosting that play large supporting roles.  This brownie production would not be the rich delicious brownie treat it is without these.

However friends, the thick layer of marshmallows that are  intertwined with the chewy, nutty brownie and the splendid chocolate icing is just magnificent.  It stands out and is what makes this brownie production the indulgent treat it is. It is the star and it steals the show.

Easy Homemade Brownie Recipe

This is such an easy brownie recipe from scratch.  The incredibly delectable flavor makes it seem like you spent all day making these when you didn’t. 

First, you’ll make a simple homemade brownie with nuts.  A layer of mini marshmallows is then melted on top of the brownies.  Lastly, an easy brownie frosting is poured over the marshmallow brownies.  This marshmallow masterpiece is then ready to devour.

  • brown sugar
  • water
  • butter
  • cocoa
  • vanilla

Let’s Bake Marshmallow Brownies

How To Make Marshmallow Brownies

  • Preheat your oven to 325F.
  • Cream shortening and sugar in large mixing bowl.
  • Add eggs and mix.
  • Add dry ingredients and stir until combined.
  • Fold in nuts.
  • Pour batter into a 9×9 baking pan that has been greased and floured or sprayed with baking spray.
  • Bake at 350F from 20 to 25 minutes.
  • Remove from oven and cover top of brownies with mini marshmallows.
  • Return to oven for 3 to 5 minutes.
  • Remove and let cool.
  • When cool pour chocolate brownie icing over the marshmallow topped brownies.

How To Make Brownie Frosting

  • Combine brown sugar, water, cocoa, butter and vanilla in a saucepan.
  • Bring to a boil for 3 minutes.
  • Let cool
  • Add powdered sugar and mix.
  • Pour over marshmallow topped brownies when brownies have cooled.

Tips For Baking Homemade Marshmallow Brownies

  • For the nuts, I used pecans, but other nuts you could use are walnuts, almonds, pistachios, and macadamia nuts.
  • Brownies are done when they feel firm to touch and they are just slightly jiggly in the middle.
  • The recipe I used called for 3 tablespoons of cocoa in the icing. I used 5 to give it more chocolate flavor.

  • ¾ cup brown sugar
  • cup water
  • 3 – 5 Tbsp cocoa for a chocolatier icing use 4 or 5 Tbsp
  • 4 Tbsp butter
  • tsp vanilla
  • 2 cups powdered sugar

Instructions

  • Preheat oven to 325°
  • Combine shortening and sugar.
    ¾ cup shortening, 1⅓ cups sugar
  • Add eggs and mix
    3 eggs
  • Mix in flour, cocoa, salt and vanilla.
    1⅓ cups all purpose flour, ½ tsp baking powder, 2 Tbsp cocoa, ⅓ tsp salt, 1½ tsp vanilla
  • Fold in chopped nuts
    ¾ cup chopped nuts
  • Pour batter in 9×9 baking pan that has been greased and floured or sprayed with baking spray.
  • Bake at 325° for 20 to 25 minutes
  • Remove from oven
  • Completely cover top of brownies with mini marshmallows.

  • Put brownies back in oven for 3 to 4 minutes.
  • Remove from oven.
  • Let cool and pour icing over top of brownies.
  • Let icing settle before cutting brownies.

  • Combine brown sugar, water, cocoa, butter and vanilla in a saucepan.
    ¾ cup brown sugar, ⅓ cup water, 3 – 5 Tbsp cocoa, 4 Tbsp butter, 1½ tsp vanilla
  • Bring to a boil and let boil for 3 minutes.
  • Let cool
  • Add 2 cups powdered sugar.

  • Pour icing over brownies.
  • Let icing settle before cutting brownies.

Notes

Prep time includes making brownies and icing.
I used pecans.  Walnuts or other nuts are just as good.
Brownies are done when they feel firm to touch and they are just slightly jiggly in the middle.
My recipe called for 3 Tbsp.  cocoa.  I wanted a chocolatier icing, so I used 5 Tbsp.  It was just perfect for me.

    In the brownie could you use self rising flour and omit baking powder and salt

    1. Sorry for the late response. I would not use self rising flour in this. This messes with the leavening. If you know the exact substitutions, maybe it will be ok. I personally would not try it. Please let me know if you do and how it turns out.
