Being that I have a life long love affair with chocolate, I added mini chocolate chips as my 6th ingredient to these mini pecan pie muffins. Friends, the chocolate chips only enhanced the amazing flavor of an already addictive treat. So glad I made these yummy gems.
Ingredients In Chocolate Chip Pecan Pie Muffins Recipe
- dark or light brown sugar
- flour – all purpose
- chopped pecans
- butter – melted – please use real butter
- eggs – beaten until foamy
- mini chocolate chips – semi sweet, milk chocolate or dark chocolate
How to Make Easy Pecan Pie Mini Muffins
- Preheat oven to 350 degrees
- In a bowl combine your dry ingredients (brown sugar, flour and pecans) and set aside.
- In another bowl combine melted butter and eggs and mix well.
- Stir egg mixture into dry ingredients until just moistened.
- Fold in mini chocolate chips.
- Grease and flour a mini muffin tin very well or spray well with baking spray. You can use muffins liners, but spray those well also.
- Fill each cavity or liner â…” full.
- Bake at 350° 17 – 20 minutes
