Do any of you remember Donny and Marie’s song A Little Bit Country and A Little Bit Rock’n Roll? (I know, put on your bell bottoms and head back to the groovy 70’s for that.) That’s what red velvet cake is like, except it’s a little bit van-ill-a and a little bit choc-o-late.

According to this post from Food Network, red velvet cake is really a vanilla cake with two or three tablespoons of cocoa added and red food coloring mixed in. It’s kinda the best of both cakes in one with red food coloring.

It also has a combo of buttermilk and vinegar that brings some acid to the batter. This acid adds a bit of tanginess to the cake and also balances out the cream cheese frosting.

  • Flour 
  • Vinegar – Helps create tanginess in the cake.
  • Cocoa – Gives it that lovely hint of chocolate.
  • Cream Cheese – Use room temperature, so it will cream well and combine easily with other ingredients. Please use full fat cream cheese, we’re making a decadent cake and you’re in it to win it.
  • Butter – Use room temperature, so it will cream well with the cream cheese and powdered sugar. Please use full fat butter, again, we’re in it to win it.

HOW TO MAKE EASY RED VELVET CAKE

  • Mix vinegar and baking soda and let stand.
  • Cream sugar and shortening well and add eggs mixing well.
  • Add cocoa and food coloring and incorporate well.
  • Add buttermilk, flour and salt.
  • Pour batter in a well greased and floured bundt pan. Bake at 350° from 45 minutes to an hour.
  • Let cool for 10 minutes.
  • Remove from pan and let it completely cool.

How To Make Easiest Cream Cheese Frosting

  • Combine butter and cream cheese well and slowly add powdered sugar and vanilla.
  • Frost cake.

HOW TO GREASE A BUNDT PAN

How many of you have greased a bundt pan, but still suffered a tragic bundt cake fail. I feel your pain friends. To work that hard on a cake and have 1/3 of it stay in the pan. That hurts.

Here are 4 methods I use to grease my bundt.

  • Simply grease the pan well with shortening or butter and cover with flour. This works 80% of the time, but I’ve had some fails with it and don’t usually use this method with bundts anymore.
  • Baker’s Joy Cooking Spray With Flour– This is from heaven. It is easy to use and gets in all those cracks and crevices shortening or butter want.
  • Cake Release Paste – I also love this method. I make mine with 1/4 cup flour, 1/4 cup shortening (melted) and 1/4 cup oil and brush it on with a pastry brush. I put left over paste in the fridge and use it again. You can also buy cake release in stores or here’s a link to Wilton Cake Release on Amazon.
  • The method I use most and have found full proof is a combination of cake release paste and Baker’s Joy With Flour. I brush my cake release throughout every crevice of my bundt and then spray a layer of Baker’s Joy With Flour over it. As of this writing, I have yet to have a bundt fail with this method.

  • ¾ cup Shortening
  • 2¼ cups Sugar
  • 3 Eggs Room Temperature
  • 3/8 cup Red food coloring 3/8's is right in the middle of 1/4 cup and 1/2 cup.
  • 1½ tsp Salt
  • 1½ cups Buttermilk Room Temperature
  • 3 3/8 cups Flour 3/8's is right in the middle of 1/4 cup and 1/2 cup.
  • 3 tsp Baking soda
  • 1½ tsp Vanilla
  • 3 Tbsp Vinegar
  • 3 Tbsp Cocoa

  • 8 ounces Cream cheese Room Temperature
  • ½ cup Butter Room Temperature
  • 4 cups Powdered Sugar
  • 2 tsp Vanilla

  • Pour batter in a well greased and floured bundt pan.
  • Bake at 350° from 45 minutes to an hour.
  • Let cool for 10 minutes.
  • Remove from pan and let it completely cool.
  • Frost.

  • Combine butter and cream cheese well.
  • Slowly add the powdered sugar until smooth.
  • Add vanilla
  • Frost cake.

Notes

I made a lot of frosting and piped it in the creases of my cake and in the center hole.  If you’re not going to use this much just half the recipe.
If you’d like to pour or spoon on a glaze instead of frosting the cake, here’s my cream cheese glaze recipe. 
This made to much batter for my 10 to 15 cup Nordic bundt pan.  I made 4 cup cakes with the extra batter.
