A scrumptious, super moist pineapple cake recipe topped with a delicious and simple pineapple glaze.

I saw this pineapple pound cake recipe in my Southern Living Homemaker’s Cake Cookbook and it didn’t really catch my fancy. However, since it involved pound cake, which is manna from heaven to me, I decided to give it a bake.

WOW friends, my taste buds and I were astounded at how moist and delicious this pineapple pound cake was. So much so, that I’m doing a blog post about it. I hope you enjoy it.

Easy Pineapple Pound Cake



  • shortening – helps the cake rise and helps create a soft interior texture
  • butter room temperature – room temperature butter creams and incorporates so much easier than cold butter.
  • sugar
  • eggs room temperature – adds structure, leavening, color and flavor.
  • all purpose flour sifted – sifted flour is easier to mix into other ingredients when making batters and doughs.
  • milk room temperature
  • powdered sugar sifted

Pound Cake – It’s a Southern Thang Yawl

Down South pound cake is one of the delicacies that define the South. It’s right up there with sweet tea, fried green tomatoes, fried okra, fried catfish, mac and cheese and Moon Pies.

Being that I’m from the South I was brought up on it. It’s pretty much in my blood and hips (it’s not a low cal delicacy, but nothing truly southern is).

A basic, traditional pound cake has an indulgent buttery, vanilla flavor combined with a moist, dense texture. This combination is simple, but it creates one of the most divine, decadent sensations on earth.

Simple Pineapple Cake


Just like my Key Lime Pound Cake, when I saw this Pineapple Pound Cake Recipe, I thought it was pound cake blasphemy. How could you mix such a tropical fruity flavor with such a pure, buttery, rich southern delicacy?

Tropical flavors are for fruity, beachside drinks with umbrellas and are not to be incorporated with a Southern gem like pound cake. This is like Gone With The Wind taking place in Key West. It’s just not right.

However, I did make it and, like my Key Lime Pound Cake, I was shocked at how amazing it tasted. This was really a super good cake.

Homemade Pineapple Cake

The crushed pineapple and its juice, that are incorporated in the cake itself, blend perfectly with the buttery flavor and moist, dense texture of the pound cake.

Plus, the pineapple glaze adds the perfect topping to this Southern yet tropical treat. It’s just the right amount of sweetness and even has a slight crunch, which is just right.

Pineapple Pound Cake Recipe Ingredients

  • ½ cup shortening
  • 1 cup butter 2 sticks at room temperature
  • cups sugar
  • 6 large eggs
  • 3 cups all purpose flour sifted
  • 1 teaspoon baking powder
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¾ cup pineapple undrained crushed pineapple and juice

Ingredients in Pineapple Cake Glaze

  • ¼ cup butter ½ stick at room temperature
  • cup powdered sugar sifted
  • 1 cup pineapple crushed and drained


Instructions for Old Fashioned Pineapple Pound Cake

  • Do not preheat oven. Cake will be placed in a cold oven to begin baking.
  • Cream shortening and butter well.
  • Slowly add sugar.
  • Add eggs one at a time. Beat until egg is just incorporated before adding the next.
  • Add sifted flour and baking powder alternately with milk.
  • Add vanilla.
  • Fold in crushed pineapple and juice.
  • Pour batter into a well-greased and floured 10 inch tube pan.
  • Place in a cold oven.
  • Turn over to 325°.
  • Bake for 1¼ to 1½ hours or until top springs back when touched lightly.
  • Let cool 10 to 12 minutes (during this time run knife around edges) and release from pan.
  • Pour pineapple glaze over cake while cake is hot.

Instructions for Pineapple Pound Cake Glaze

  • Combine ¼ cup room temperature butter, 1½ cups powdered sugar and 1 cup drained pineapple. Incorporate well.
  • Pour over hot pound cake.


I highly recommend sifting your powdered sugar to get any lumps out.  Please learn from my mistake.
If there are powdered sugar lumps in the glaze, microwave the glaze for 20 to 30 seconds and stir.  This helped dissolve some of the lumps for me.

    1. Great question. I think it would be just fine. You will probably need 2 bread pans for this recipe. It makes a good size pound cake. Please let me know how it turns out. Thanks
