It’s SWEATA WEATHA and I’ve been doing my fall baking.  I started off with my core focus on apple cake, apple cobbler and apple crisp, but now it’s time to change my focus to the pumpkin.  Yes, it’s time to carve out some time for autumn pumpkin bake’n. 

I started off my fall 2022 pumpkin bake’n with this spiced pumpkin cake with cream cheese frosting from my Amish Country Cookbook. This simple pumpkin cake proved to be a pumpkin spice-tacular way to begin pumpkin bake’n 2022.

I just love anything pumpkin spice.  Yes, my blood type is pumpkin spice.  So, I knew when I made this cake I would have a hard time fleeing temptation.  In fact, would I even want to flee?

Well, evidently I didn’t want to flee that much, because I proceeded to give into this scrumptious, moist pumpkin spice cake from scratch and eat 3 pieces (I don’t mean over days. I mean in one sitting).

Yawl, this cake was just so perfectly moist and had just the right amount of cinnamony pumpkin flavor. Then add the toasty walnuts and that cream cheese frosting and you’ve got a cake that is almost impossible to flee.

Warning, if you make this moist pumpkin spice cake you had better be prayed up or it could end up being a 3 piece sitting for you also.

One Bowl Homemade Pumpkin Cake

So, now that I’ve told you how tasty this cinnamon pumpkin cake is, let me tell you how easy to make it is. Two words describe how easy it is, “ONE BOWL”. Yes, you can whip this up in one bowl.

Literally you can throw all your ingredients in one bowl and mix by hand (I did use a mixer for the cream cheese frosting). Then put it in a 9×13 pan, bake and frost.

Yes, this pumpkin spice temptation in a 9×13 pan is just so easy to access. So, if you’re having a pumpkin spice craving remember, “JUST ONE BOWL”.

Can You Substitute Pumpkin Pie Filling For Pumpkin Puree?

Don’t use pumpkin pie filling if the recipe calls for pumpkin puree, unless you want a pumpkin spice mis-cake. Yes, pumpkin puree and pumpkin pie filling are completely different.

According to this post from Southern Living, pumpkin puree is simply cooked pumpkin. While pumpkin pie filling is cooked pumpkin flavored with spices like cinnamon, clove, allspice, and ginger, and is also pre-sweetened.

So, unless you want an overly fall spiced cake that’s super sweet, don’t substitute pumpkin pie filling for pumpkin puree.

Why Make This Homemade Pumpkin Cake

This moist, spiced pumpkin cake is superbly cinnamon spiced. It is then full of toasty walnuts and topped with a creamy, buttery cream cheese frosting. Add to it’s deliciousness, the fact that it’s so easy to whip up, this cake is a win, win for fall (or anytime of year),

Ingredients

Ingredients For Easy Pumpkin Spice Cake

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 4 eggs
  • 1 cup walnuts pecans will also be good.
  • 2 cups pumpkin puree this is very close to a 15oz can of pumpkin.
  • 2 cups sugar
  • 1 cup oil

Ingredients In Buttery Cream Cheese Frosting

  • 1 stick butter room temperature
  • 8 ounces cream cheese room temperature
  • 2 cups powdered sugar
  • 1 – 2 tsp vanilla

Instructions

Instructions For Easy Spiced Pumpkin Cake

  • Preheat oven to 350°
  • Sift together your flour, baking powder, baking soda, salt and cinnamon and set aside.
  • Combine your sugar, oil, eggs and pumpkin.
  • Add your flour mixture and combine.
  • Fold in your walnuts.
  • Pour batter into a 9×13 baking pan that has been greased or sprayed with baking spray.
  • Bake cake for 25 to 35 minutes
  • Remove from oven and let cool.
  • Frost with cream cheese frosting.

Instructions For Buttery Cream Cheese Frosting

  • With a mixer combine butter and cream cheese well.
  • Add powdered sugar in increments and mix after each addition.
  • Add vanilla
  • Frost cooled pumpkin spice cake.

Notes

If you want to frost this cake, let it fully cool, so the frosting want melt.  If you don’t want to frost, you can dig in when you pull it out of the oven.
The recipe called for walnuts and I used walnuts.  However, pecans would also be very tasty.
