I like to think of this blueberry cake as kind of an Indian Summer cake. In Indian summer, summer shows up amongst all of falls colors, smells and activities (You’re having a pumpkin spice latte and sweating, because it’s 90 on October 15).

Same thing with this scrumptious blueberry cake. The sweet juicy blueberries of summer just show up amongst cinnamon, allspice and cloves, the toasty fall spices in this spice cake.

However, instead of being unwelcome or out of place in this old fashioned spice cake, these blueberries enhance the already delicious spice cake. They combine brilliantly with the fall spices and even give the spice cake a yummy, juicy, sweet flavor punch.

You will love the one-two flavor punch of this blueberry spice cake. Who knows if it’s a spring/summer cake or a fall/winter cake. All that matters is, it’s a knockout of a cake and, because of the fall and summer flavors, can be served all year long.

  • sugar
  • blueberries – fresh or frozen
  • eggs – room temperature
  • all purpose flour
  • baking soda
  • cinnamon

Blueberry Cake

  1. Sift together flour, soda, allspice, cinnamon and cloves and set aside.
  2. Combine cooking oil and sugar until sugar dissolves.
  3. Beat in eggs
  4. Add dry ingredients and mix.
  5. Fold blueberries in batter
  6. Pour batter in greased and floured 9×13 baking pan.
  7. Bake for 40 minutes at 350°.
  8. Remove from oven and let cake cool.
  9. Ice cake with cream cheese frosting.

Cream Cheese Frosting

  1. Combine cream cheese and butter until smooth.
  2. Add powdered sugar and mix until smooth.
  3. Add vanilla and mix.
  4. If needed add milk a tablespoon at a time for desired thickness.
  5. Spread over blueberry cake

Baking Tips For The Best Blueberry Cake Ever

  • You can make this blueberry cake with frozen blueberries or fresh blueberries. If using frozen blueberries, thaw the blueberries first and then pat them dry before folding in the batter.
  • Fold your blueberries in the batter just before turning your batter into the pan. This will help prevent purple streaks in the batter.
  • Toss the blueberries in 1 to 2 tablespoons of flour before folding them into the batter. This will help prevent them from sinking to the bottom of the cake.

Can You Freeze Blueberry Cake With Frosting

This cake freezes very well. While writing this post I’m actually eating a piece of this cake that was in the freezer for a week. It is still so yummy after serving some freezer time. To freeze this cake:

  • Cut the cake in squares and place the squares in a freezer storage container. Do not place the squares on top of each other. The cake will keep around 3 months in the freezer.
  • If you’re making this cake ahead of time and will need to serve it uncut, you can freeze this 9×13 blueberry cake in the pan. Simply wrap the entire pan in plastic wrap and then aluminum foil.

Notes

The prep time includes the time it takes to make both the cake and the frosting.
You can make this blueberry cake with frozen blueberries or fresh blueberries. If using frozen blueberries, thaw the blueberries first and then pat them dry before folding in the batter.
Toss the blueberries in flour before folding in the batter.  This will keep them from sinking to the bottom of the cake while baking.
The milk in the cream cheese frosting is optional.  If the icing is to thick start by adding 1 TBS of milk to thin the frosting.
